Ras-Al-Hanout Brochettes

Dice beef or lamb and rub with Ras-al-Hanout, garlic, ginger, fresh parsley and coriander, salt and olive oil. Allow to sit and absorb flavours for about 1 hour and place on skewers. Cook on the barbeque or under the grill, basting with any remaining juices.

Turkish Stew

In a large saucepan fry chopped onions and garlic in butter, and add diced beef until browned. Add chopped tomatoes and puree. Add stock and boil. Add cooked haricot beans, crushed chilli (optional) and Turkish spice and salt. Cook, covered, until meat is tender. May need to add a little water.

Baharat Roast Chicken

Wash whole chicken. Rub in olive oil, salt and Baharat. Bake in hot oven for 30 mins and then at medium temperature for 1-2 hours, depending on size of chicken. Add pieces of potatoes, carrots, pumpkin, sweet potato. Bake until well done and crisp on the outside. Serve with peas.
