Lentil and Pumpkin Tagine
Fry onions and garlic. Stir in Tagine Spice for 10 seconds. Add peeled, seeded and diced tomatoes, tomato paste, chopped coriander/parsley, and salt to taste. Simmer for 3 minutes. Add cooked lentils and peeled pumpkin. Cover and simmer until tender. Add water if necessary. Serve sprinkled with more parsley/coriander and crusty bread.
