Cut whole chicken along backbone. Pull out and flatten on baking tray. Rub with Tagine Spice, olive oil, salt and lemon juice. Add potato wedges, carrot sticks, eggplant pieces, sliced zucchini, quartered onions and chopped tomatoes. Cover and bake at 200c for 40 mins and 180c for 1½ hours with cover off for final ½ hour.
