Turkish-Style Baked Vegetables

Cut root veggies (eg potatoes, sweet potatoes, carrots, pumpkin, beetroot) into pieces. Spread on baking dish. Sprinkle with Turkish Spice, salt and olive oil. Rub into vegetables. Cut onions and tomatoes into quarters and arrange on top. Slice red pepper and place evenly. Slices of eggplant and/or zucchini can be added too. Sprinkle again with salt, and rosemary. Cover and bake at 200c until tender (1-1½ hours). Bake a further 10 mins uncovered.
